A Sure-Fire Thanksgiving Favorite: BBQ Review’s Famous Mac & Cheese

BBQ Review was an iconic Oakley restaurant easily identified by the larger-than-life pink pig statue in front of the Madison Rd. establishment. When the owner, Bill Thomas, decided to retire earlier this year, he very generously shared the recipe for his famous macaroni and cheese (link to http://www.cincinnati.com/story/news/local/independence/2015/03/01/bbq-review-dishes-addicting-macaroni-cheese-recipe/24229681/) with Community Press columnist Rita Heikenfeld.

If you’re looking for a crowd-pleasing side dish to share this Thanksgiving, BBQ Review’s mac & cheese may be just the ticket. 

Clone of BBQ Review's Famous Mac & Cheese

If you want it "cheesier" add more cheese. This is more like the old fashioned type, with a mild flavor. This recipe doubles or triples easily.

1//2 pound elbow macaroni - 2 cups dry

1 stick butter - 4 oz.

1/4 cup onion, diced fine

1/4  cup flour

Salt and pepper to taste

4 oz. regular, not low fat, Velveeta cheese, cubed

4-6 oz. shredded cheddar, divided (I used a heaping cup, probably more like 6 oz.)

2 cups milk, warmed

Boil macaroni in salted water, drain, and set aside while making sauce.

Over medium heat, melt butter and stir in onion. Cook until onion is translucent but not brown. Add flour, salt and pepper and whisk just until flour is light brown. Stir in milk and whisk until thicker and bubbly.

Remove from heat and stir in Velveeta and a little more than half the cheddar. Stir in macaroni. The mac & cheese will be very creamy and thickens as it sits. Sprinkle with rest of cheddar.

Versatile cheese sauce: Sauce alone is a good all-purpose cheese sauce.

Customer Technology Class Debuts to a Full House

Today’s in-car technology is pretty amazing—and can sometimes be intimidating. Borcherding created our Customer Technology Class to help demystify the screens and capabilities of modern cars, and to make the driving experience more fun.

We held our first class recently, and it attracted a sellout crowd! We were able to answer questions about in-car apps, Bluetooth, Intellilink and more. “Students” got to sit in cars and try out what they’d learned, and they left with some great tips for getting more out of their cars.

We’re planning a series of classes, so tell us: What do you find confusing about your car’s technology? What knowledge would help you take advantage of all your car can do? Let us know, and you may see that topic incorporated into our upcoming schedule.

We’re pleased to announce Borcherding’s sponsorship of Pink Ribbon Girls, an organization that provides direct services, education and support to women with breast cancer to help ease life’s daily worries so they can concentrate on healing.

PRG’s motto, “No one travels this road alone,” is much more than lip service; in fact, we’re proud to be able to supply their courtesy vehicles, which allow volunteers to drive patients to doctor’s appointments.

Pink Ribbon Girls is a volunteer organization that seeks to balance the fear and uncertainty that breast cancer brings to individuals and families by providing direct services, education, and support. They provide patients and their families with services to ease the workload of daily life while providing access to peer support so they may be informed and comforted from wisdom of others who have traveled this road before them. www.pinkribbongirls.org

On September 24, Kings and Loveland high schools will be selling Pink Ribbon Girls t-shirts during a televised football game; the person who sells the most shirts will get to compete for $5,000 when they take a shot at kicking a football into a goal in the back of a Borcherding GMC truck! Pink Ribbon Girls also stands to win $5,000.
